2023 St Leonards Vineyard 'Pilot Project' Ruby
100% Ruby Cabernet, Ruby is a young, fresh, soft and medium-weighted red wine.
With natural fermentation, Ruby is a masterclass in tension, presenting a delicate equilibrium of acidity and tannin. Serve it chilled, assemble your crew, and revel in its spirited notes of sour raspberries, with a hint of invigorating mint, adding interest and personality.

FOOD PAIRINGS
Gather your friends for a sublime summer soiree and let Ruby take center stage. Ruby is your partner in crime during those summer nights where you want to have a barbecue in the backyard or a catch up with your crew. Think of seared duck breast with red curry, grilled lamb chops or grilled vegetables. Being made of entirely Ruby Cabernet, a grazing platter laden with prosciutto, salami, and fatty meat will also cut through the acid in the wine perfectly.
WINEMAKING
Winemaker Nick Brown crafted Ruby from 100% Estate grown Ruby Cabernet grapes in Wahgunyah on 6 March 2023. The grapes were hand-picked and pressed after four days on skins. Ruby underwent natural primary fermentation and natural malolactic fermentation. It was pressed to barrels at 8 Baume and aged in old 225L barriques and 250L puncheons. Nick plunged the ferment once daily; the wine has minimal tannin, just enough to carry its gorgeously sappy acid.
